DIY Chipotle

Could I put Chipotle out of business? Probably not (I can't wrap a burrito). Does it taste exactly like it? I've heard mine is better.

 

Cilantro Lime Rice


Ingredients

1 cup basmati rice (do not substitute, this is what gives it the flavor!)

1 lime (for juice)

2 cups water

1 tsp salt

3 tbsp fresh chopped cilantro

3 tsp vegetable oil


Cooking Instructions

  1. In a small heavy pot, add rice, water, 1 tsp oil and salt.

  2. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low and cover about 20 minutes.

  3. Shut off flame and keep covered an additional 5 minute.

  4. In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.


Protein (Chicken or Steak)


Ingredients

1/2 medium red onion coarsely chopped (or a few tablespoons of onion powder)

3 cloves garlic (or a few tablespoons of garlic powder)

2 tablespoons adobo sauce

2 tablespoons ancho chili powder (or normal chili powder

2 tablespoons olive oil

2 teaspoons ground cumin

2 teaspoons dried oregano

2 pounds boneless, skinless chicken or steak


Cooking Instructions

Chicken

  1. Dry the chicken off then cut the chicken into bite sized pieces.

  2. Add your chicken and all the seasonings in a bowl until the chicken is covered in the seasoning.

  3. Add your seasoned chicken, any extra seasoning left, and adobo sauce to a bag - let marinate overnight if possible.

  4. Heat up the pan, add the oil, then cook the chicken. Once cooked all the way through, set aside and cover until ready to serve.

Steak

  1. Cut the steak into bite sized pieces then throw all the seasonings in a bowl

  2. Add your steak and all the seasonings in a bowl until the steak is covered in the seasoning.

  3. Add your seasoned steak, any extra seasoning left, and the adobo sauce to a bag - let marinate overnight if possible.

  4. Heat up the pan, add the oil, then cook the steak. Once cooked all the way through, set aside and cover until ready to serve.


Corn Salsa


Ingredients

1 or 2 cans of canned corn

1/2 cup of red onion

1 small can (3-4oz) of green chilies

1/4 cup fresh cilantro

1 tbsp of lemon juice

1 tbsp of lime juice

A pinch of salt


Cooking Instructions

  1. Drain the corn and green chilies completely then add to a bowl. Dice the red onion and cut up the cilantro.

  2. Add the rest of the ingredients to your bowl with the lemon and lime juice - add your salt to taste.

Cheese


Ingredients

1 block of monterey jack cheese

A cheese grater


Cooking Instructions

  1. Grate the cheese! A small touch that makes a big difference - plus it's hard to fix shredded monterey jack only on it's own.


Queso Blanco

Ingredients

1 cup monterey jack cheese

1/3 cup sharp white cheddar cheese

1 tbsp unsalted butter

1/4 - 1/2 cup yellow onion

1 tbsp of fresh garlic

1/2 tbsp cumin

1 can/12oz of evaporated milk

2 tbsp of cornstarch

A pinch of salt

Optional: 1 small can (3-4oz) of green chilies


Cooking Instructions

  1. Melt a butter in a medium size sauce pan over medium high heat. Once the butter is melted, add in the onion and peppers and cook for a 2-3 minutes. When they are soft, add in the garlic, tomato and cumin.

  2. In a separate bowl, mix in the evaporated milk and cornstarch in a separate bowl until the they are completely combined. Pour this mixture into the pan until it begins to thicken.

  3. Once the mixture is thickened, add the cheese in small handfuls until the it's melted and the sauce is smooth. Add salt to taste.
